The Racine Zoo's Chronicles at the Zoo event is presented by Bourbon Chronicles. Included in Chronicles at the Zoo will be a delicious catered meal, a silent and live auction, bourbon tasting, an ambassador animal encounter, and so much more.

Welcome to Bourbon Chronicles! In 2019 we created a passionate bourbon club that partners with local restaurants, caterers and non-profit organizations to bring guests the best bourbon and food experience possible. Our mission is to share the rich history and culture of bourbon through engaging talks and events. Over the years we have expanded our reach by hosting benefits for local non-profits helping to raise awareness and supporting their financial needs. We host monthly tastings, private events or corporate dinners with bourbon, whiskey and have recently added a Tequila event. Our team partners with local caterers that skillfully pair each course with one of the expressions we offer during the dinner. Guests come from as far as Illinois, Madison, Lacrosse and many other towns in Wisconsin. From the first sip to the last drop these are our experiences our adventures our Chronicles!

Course 1 – Salad
Apple & Candied Pecan Salad
Mixed greens, Honeycrisp apples, goat cheese, dried cranberries, candied pecans, champagne vinaigrette
Paired With: Caribou Crossing
Pairing Notes: The fresh apple and light sweetness of the salad complement the whiskey's fruit and oak notes, creating a smooth and refreshing start.
Course 2 – Appetizer
Bourbon Glazed Pork Belly
Sweet corn spoon bread, bourbon glazed pork belly, pickled apple slaw
Paired With: Eagle Rare 10 Year Single Barrel
Pairing Notes: The honey and caramel notes in Eagle Rare pair naturally with the rich pork belly, while the apple slaw adds brightness and balance.
Course 3 – Entrée
Filet Medallions
Wild mushroom ragout, truffle mashed potatoes, port-bourbon reduction
Paired With: Blanton's Single Barrel
Pairing Notes: The rich beef and earthy mushrooms highlight the bourbon's caramel, vanilla, and oak flavors for a classic pairing.
Course 4 – Dessert
Salted Caramel Cheesecake
Bourbon caramel drizzle, candied pecans
Paired With: Whistle Pig 12 Year
Pairing Notes: The cheesecake's caramel and vanilla flavors bring out the whiskey's notes of dried fruit, honey, and baking spice, creating a smooth finish to the evening.
